Tortilla Dough

Ingredients

FULL BATCH

  • 28 lbs Flour
  • 6 lbs shortening
  • 2.5 cups baking powder
  • 2.5 cups salt
  • 7 quarts water

LARGE BATCH

  • 14 lbs Flour
  • 3 lbs shortening
  • 1.25 cups baking powder
  • 1.25 cups salt
  • 3.5 quarts water

MEDIUM BATCH

  • 7 lbs Flour
  • 1.5 lbs shortening
  • .5 cups baking powder
  • .5 cups salt
  • 1.75 quarts water

SMALL BATCH

  • 3.5 lbs Flour
  • 24 oz shortening
  • .25 cups baking powder
  • .25 cups salt
  • 1 quarts water

Directions

Mix everything together, separate in to portions of 2.5 lbs and chill until ready to press.

Large Tortilla (Quesadilla)
Cut 5 oz from larger dough ball and press in tortilla machine. Pack 20 per bag and chill until needed.

Small Tortilla (Taco)
Cut 1.2 oz from larger dough ball and press in tortilla machine. Pack 20 per bag and chill until needed.
