- 42 lbs (1 case) of chicken (14 chickens @ 3 per chicken)
- 1 cup of garlic salt
- 1 cup of garlic powder
- 1 cup of salt
- 1 cup of crushed red pepper flakes
- 1 cup of paprika
- 1 cup of oregano
- 1 cup of thyme
- 1 cup of brown sugar
- 1 cup of black pepper
- 1 case of whole chickens
- 20 limes
- Wood chips soaked in water
Mix all seasonings together in bowl.
Cover chickens in seasoning.
Place half a sliced limes into chicken.
Place soaked wood chips into smoker.
Place chicken unto racks in alto sham.
Let chicken smoke for an hour and cook for three hours at 350 degrees in the alto sham.
Chill, then bag into 4 oz portions until needed.
