Shrimp Ceviche


Poached shrimp:

  • 1/2 bag frozen shrimp
  • 2 bay leaves
  • 1 Tbl Old Bay seasoning
  • 1 lemon

Shrimp Ceviche:

  • Poached Shrimp (see directions below)
  • 1 cup small diced tomato
  • 1/2 cup small diced yellow onion
  • 1/8 cup minced jalapeno
  • 1/4 bunch chopped cilantro
  • 1 Tbl champagne vinegar
  • 2-3 lime, juice….depending on ripeness


Poached shrimp: boiling water with 2 bay leafs,  1 lemon cut into 1/8, squeeze juice into water and throw the rind in as well. Add 1 Tbl Old bay seasoning, add 1/2 bag frozen shrimp, poach for 5 minutes. remove from heat and let sit until shrimp is tender. Properly cool and place in cooler with liquid so it doesn’t dry out.

Ceviche: Once cooled cut the shrimp in half, width wise. Combine all ingredients & adjust to taste
