- 25 lbs roma tomatoes
- 3 pounds yellow onions
- 2 cups of Blanco tequila
- 3 cups cilantro, fresh chopped
- 10 garlic cloves
- 10 tablespoons of salt
- 4 tablespoons of black pepper
Blacken tomatoes, onions, and jalapenos on grill.
Place in 22 quart container and let cool in ice bath.
Blend all items together make sure all ingredients are well blended.
