- 6 cups shredded green cabbage
- 3 cups shredded red cabbage
- 1.5 cups julienne carrots
- .5 cup diced pickled jalapeno peppers
- .75 cup scallions
- 3 cups mayo
- 1/4 cup cider vinegar
- 1/2 cup sugar
- salt to taste
In a large bowl combine the red and green cabbage, carrots, scallions, and diced jalapeno peppers. Toss and put to the side.
In another mixing bowl add mayo, sugar and apple cider vinegar. Whisk until smooth.
Pour over dry ingredients mix well and refrigerate until needed.
