Black Bean Burger Patties

Ingredients

  • 6 lbs black beans, rinced and strained
  • 3 shallots, chopped
  • 3 garlic cloves, minced
  • 6 tsp chili powder
  • 3 tsp cumin
  • 3 tsp smoked paprika
  • 2 tsp salt
  • 2 tsp pepper
  • 3 lime zest + lime juice
  • 3 tsp tabasco
  • 3.75 cups quinoa
  • 3 eggs
  • 3 tsp cajun seasoning

Directions

Reserve 1 cup black beans aside.

Add remaining beans, shallots, garlic, spices, lime zest, juice and hot sauce in food processor.

Mix until chunky puree.

Add the rest of the beans, quinoa, and whole egg.

Stir together to create a dough.

Ball up and hand press into patties and refrigerate at least 2 hours before using, not covered.
