  • 20 cups flour
  • 2 butters, small
  • 2 quarts buttermilk
  • 10 teaspoons salt
  • 10 teaspoons baking soda
  • 10 tablespoons baking powder


Heat overn to 400 degrees.

In the hobart mixer, add flour, salt, baking powder, baking soda. Mix well.

Dice butter in to small cubes, then blend into mixture until it looks sandy.

Add buttermilk and fold ingredients by hand until mixture forms a soft and sticky dough.

Sprinkle flour over prep table, place dough on the surface. Let rest for 10-15 minutes.

Sprinkle flour on top of the dough and press down on the dough until it feels springy and smooth.

Flatten dough evenly using your hands until 1/2 inch thick.

Coat biscuit cutter with flour so it doesn’t stick when you cut the biscuits out.

Cut and place dough on an ungreased sheet tray and let it cook for 20-25 minutes.
